Capitalizing on vodka’s timeless appeal, Proof offers almost 50 varieties from around the world, including Belvedere, Grey Goose and Zubrówka from Poland (one-ounce shot, $9.25), plus innumerable classic cocktails (manhattan, sidecar, rusty nail) and some 26 vodka-based martinis. The true virtues of the place, however, are decidedly traditional. Service is immaculate, the vibe luxuriously calm. Plush sage-coloured seating is arranged against dark wood walls, with space to spare so that each grouping feels as if it’s a private living room. Floor-to-ceiling windows look out on the hotel’s private courtyard and a newly renovated Bloor Street (including the ROM and the Royal Conservatory of Music). The music is low-key soulful, the lighting discreet.
