CHERRY BOMB
The cherry-fig manhattan ($14) at Rain is made with the usual bourbon, vermouth and bitters, but with a molecular twist. Fresh cherries are stuffed with fig paste and coated with sweet vermouth, then dropped into liquid nitrogen, making a frozen ball. As the vermouth melts in the drink—cooling and adding sweetness—you’re left with a delicate, fruity treat.
