A summer camp favourite gets dressed up By Claire Tansey

Hot, sweet and gooey, s’mores are the ultimate campfi re treat and taste like being a kid in summertime—like going two months straight in a bathing suit. So there’s nostalgia at work in Far Niente’s bestselling dessert ($9), even if the indulgence is designed for adult tastes. “It’s luxurious comfort food,” says chef Gordon Mackie. “This is familiar, but over the top.” Rather than exploiting pantry staples, here everything is made from scratch, from the buttery graham cookies to the house-confected marshmallow. A semi-sweet chocolate mousse and a ramekin of bittersweet sauce (made with Lindt 70%) take the edge off the numbing sweetness. Though summer’s over, there are embers yet in the fire.
