1. The Harbord Room. Fred’s Bread brioche is the perfect bun for this succulent disc of ground chuck. Topped with sweet caramelized onion, two-year-old cheddar, rashers of Berkshire bacon and fabulous house-made condiments, it’s a beautiful thing. $16.
2. The Drake. Crowned with a grilled jalapeño, the towering Classic Burger is a two-handed affair. Seven ounces of Kerr Farms beef are stacked with house-smoked bacon, grilled onions, piquant Ciel de Charlevoix blue cheese and a smear of Kozlik’s dijon aïoli. Perfect for super-sized hankerings. $18.
3. Globe Bistro. Made from Sterling Silver rib-eye, this one’s a juicy plate drencher. The thick half-pound patty is pan fried in clarified butter and supported by an all-Canadian cast: Quebec curds, Niagara pancetta and mushrooms from Grey County. The soft sesame and poppy seed bun is made in-house, as is the smoked-tomato ketchup. It’s messy, delicious decadence. $15.
4. Cowbell. Conscientious dining meets comfort food: grass-fed beef from Dingo Farms is the star of this loca-burger. Seared on the grill, it’s laid on a soft buttermilk bun with two-year-old cheddar and, in lieu of bacon, thin slices of glorious house-smoked venison salami. $21.
5. Crush. Coarsely ground Wellington County strip loin gives this burger a satisfying steak-like texture. Sandwiched in an Ace Bakery bun, Monforte smoked cheddar melts over crisp Dolce Lucano pancetta. Peppery arugula and an oven-dried roma redefine lettuce and tomato. $18.
