After teasing a hungry public for over half a year, Susur Lee, arguably the city’s most internationally recognized chef, opened his newest venture Lee Lounge last week. Formerly Susur, and then Madeline’s, the room has undergone a striking transformation at the hands of Brenda Bent (Lee’s wife and business partner) and Karen Gable—the duo responsible for many of Lee’s spaces, including the neighbouring Lee.

On Monday night, we found ourselves at the highly anticipated Valentine’s Day opening of Lee Lounge, the new restaurant from Susur Lee. The room was buzzing, with all hands on deck working to the beat of the floor manager’s Iron Chef-like calls. A bartender was making frantic last-minute adjustments to one of the new cocktails, the very dirty ume plum martini. Amid this chaos, Susur Lee was the eye of the storm. He spoke with us at length, excusing himself with only thirty minutes to go before the service started. Our conversation, below

Just Opened: Knife, a Queen West shop devoted to the world’s best kitchen blades

Tucked into a diminutive second-storey space at Queen West and Tecumseth, Knife feels like an art gallery: high-end Japanese blades are laid out on blood-red felt backdrops and showcased in white display cases. As the name suggests, this shop is devoted to the one truly indispensable kitchen tool: the knife.

Along with prix-fixe menus and pink slip parties (we’re looking at you, Globe), reduced corkage fees have become a popular recession-era tactic for restaurants trying to attract diners. Ontario jumped on the BYOB bandwagon in January 2005, it has never had the same success as similar programs in Quebec. That is, until now.

After making news—some good, some bad—with his new restaurant, Shang, over the past four months, Susur Lee is bringing the menu of his Manhattan venture to Toronto for a brief cameo. The celebrity chef will offer his newest creations at both of his satellite restaurants, Lee and Madeline’s, with a special prix fixe menu. For the first two weeks in April, Torontonians will be able to sample a three-course Shang offering from Monday to Wednesday for $35 and $1 corkage, as well as a five-course Shang menu from Monday to Saturday for $60.
