Last January, husband-and-wife team Jeff and Nuit Regular handed over the reins of Sukhothai, their tiny east-end jewel, to Jeff’s parents and opened new downtown digs. Here, pad Thai—the quintessential but usually-botched Thai staple—is done two ways by chef Nuit: Sam Ros and street-style. The street-style pad thai ($10) gets everything right (read: no ketchup). A filling portion of rice noodles is tossed with lots of tender chicken, chewy morsels of fried tofu and green onions, and some crunchy cabbage to cool things off a little. You won’t settle for a lesser pad Thai after this one.
The cost: $19, including tax, tip and Thai iced tea ($4.50).
The time: 1 hour (expect to wait for a table if you don’t have a reservation).
